Chicken Thighs with Peppers Recipe

  • 8 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 2 red bell peppers, seeded and sliced into strips

Preheat oven to 375 degrees F (190 degrees C).

  1. In a large skillet, heat olive oil over medium heat.
  2. Add onion and garlic; cook and stir until onion is tender.
  3. Stir in oregano, cumin, paprika, salt and pepper.
  4. Add bell peppers; cook for 5 minutes or until peppers are tender.

Place chicken thighs in a 9×13 inch baking dish; top with pepper mixture.

Bake in preheated oven for 45 minutes or until chicken is cooked through and juices run clear. Serve hot.
