- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) chickpeas, rinsed and drained
In a large skillet over medium-high heat, heat the oil. Add the chicken thighs and cook until golden brown on both sides, about 8 minutes. Transfer the chicken to a plate and set aside.
Add the onion to the skillet and cook until softened, about 5 minutes. Add the garlic, oregano, and cumin and cook for 1 minute more.
Add the tomatoes and bring to a simmer. Return the chicken to the skillet and spoon some of the sauce over it. Simmer for 10 minutes more.
Stir in the chickpeas and simmer for 10 minutes more. Serve hot with rice or pasta.
