Chicken Thighs Ratatouille

This Chicken Thighs Ratatouille is a delicious and easy-to-make French classic. With just a few ingredients, you can enjoy the flavor of this traditional dish.


  • 4 chicken thighs, skinless and boneless
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 2 tomatoes, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chicken thighs and season with salt and pepper. Cook until lightly browned on both sides.
  3. Remove the chicken from the skillet and set aside.
  4. Add the onion to the skillet and cook until softened, about 5 minutes.
  5. Add the garlic, bell pepper, zucchini and tomatoes. Cook for another 5 minutes or until vegetables are soft.
  6. Return the chicken to the skillet and cover. Simmer for 10 minutes or until chicken is cooked through.
