This delicious Chicken Tajine with Prunes and Almonds is the perfect dish for a special occasion. It’s savory, sweet, and full of flavor!
- 1 tablespoon olive oil
- 2 cups diced onion
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (or more to taste)
- 6 boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 cups chicken broth
- 2 tablespoons tomato paste
- 1/2 cup pitted prunes
- 1/4 cup slivered almonds
Heat the oil in a large heavy-bottomed saucepan over medium heat. Add the onions and sauté until softened, about 5 minutes. Add the garlic, cumin, coriander, ginger, cinnamon and cayenne pepper; cook for 1 minute. Add the chicken thighs and cook for 3 minutes. Stir in the broth and tomato paste; bring to a simmer.
Add the prunes and simmer until the chicken is cooked through, about 20 minutes. Stir in the almonds during the last 5 minutes of cooking.
