Chicken Strips with Mustard and Mashed Potatoes and Carrots

This recipe is perfect for a quick and hassle-free dinner. The chicken strips are marinated in mustard, giving them a tangy flavor, then cooked with potatoes and carrots to create an easy and delicious meal. Serve with a side salad or steamed vegetables for a complete dinner.

  • 4 chicken strips
  • 2 tablespoons Dijon mustard
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 2 potatoes, peeled and diced
  • 3 carrots, peeled and diced

In a shallow dish, combine the mustard, garlic powder, and pepper. Add the chicken strips to the dish and turn to coat in the mustard mixture. Cover with plastic wrap and refrigerate for 1 hour.

Heat the olive oil in a large skillet over medium heat. Add the chicken strips to the skillet and cook for 10 minutes, turning occasionally, until golden brown and cooked through. Remove from the skillet.

Add the potatoes and carrots to the skillet. Cook for 10 minutes, stirring occasionally, until tender. Return the chicken strips to the skillet and cook until heated through.

Serve the chicken strips with mashed potatoes and carrots.
