Chicken Stew with Chorizo and Potatoes

This delicious chicken stew is easy to prepare and full of flavor. It’s made with chorizo, potatoes, garlic, tomatoes and herbs for a hearty meal.

  • 4 chicken breasts, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 200g chorizo sausage, diced
  • 2 large potatoes, peeled and cubed
  • 1 can (400g) diced tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Heat the olive oil in a large pot over medium-high heat. Add the chicken and onion and cook until the chicken is golden brown, about 5 minutes. Add the garlic and chorizo and cook for another 2 minutes. Add the potatoes, tomatoes and spices. Reduce heat to low, cover the pot and simmer for 25-30 minutes or until the potatoes are tender. Serve warm.
