Chicken Skewers with Honey, Thyme and Paprika with Vegetables

This delicious dish is a great way to add flavor to your chicken while still keeping it healthy. The combination of honey, thyme and paprika gives the chicken a unique and delicious flavor, while the vegetables add an extra boost of nutrition. Enjoy this easy and tasty meal!

  • 1 pound boneless skinless chicken thighs, cut into cubes
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into wedges

Preheat the oven to 350°F (175°C). Grease a baking sheet with non-stick spray.

  • In a large bowl, combine the chicken cubes with the olive oil, honey, paprika, thyme and salt and pepper. Mix until all the ingredients are evenly combined.
  • Spread the marinated chicken on the baking sheet and bake for 15 minutes.
  • Meanwhile, prepare the vegetables. Place the bell peppers and onions on a separate baking sheet and spray lightly with non-stick spray. Bake for 10 minutes.

Once everything is cooked through, assemble your skewers by threading alternating pieces of chicken and vegetables onto each skewer. Serve hot with your favorite side dishes.
