This classic Chicken & Rice recipe is an easy, delicious and comforting meal that can be made in one pot. It’s a great dish to make on a weeknight.
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 pound boneless chicken thighs, cut into bite-sized pieces
- 3 cups chicken broth
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 1 cup long-grain white rice
- 2 tablespoons fresh parsley, chopped (for garnish)
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for about 5 minutes until softened. Add the chicken pieces and cook for another 5 minutes until lightly browned.
Add the chicken broth, oregano, paprika and black pepper. Bring to a simmer and add the rice. Stir to combine and cover with a lid. Simmer for about 15 minutes until all of the liquid has been absorbed.
Remove from heat and let stand for 10 minutes. Fluff with a fork and serve garnished with fresh parsley.
