Chicken, Prunes, Honey and Almonds Tajine

This traditional Moroccan recipe is a great way to enjoy a delicious meal with subtle sweetness! Chicken, prunes, honey and almonds combine to make an irresistible dish that is sure to be a hit with all your family and friends.

Ingredients:

  • 1 whole chicken cut into pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 1 cup chicken broth or water
  • 1/2 cup pitted prunes
  • 2 tablespoons honey
  • 1/4 cup slivered almonds, toasted (optional)

Instructions:

    < li >Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and sauté for about 5 minutes until softened. Add the garlic, ginger, cumin, cinnamon, turmeric and cayenne pepper (if using) and cook for another 2 minutes. < li >Add the chicken pieces to the pot and season with salt and pepper. Cook for about 10 minutes until lightly browned on all sides.< li >Add the broth or water, prunes and honey. Bring to a boil then reduce the heat and simmer for 25-30 minutes until the chicken is cooked through.< li >Stir in the almonds (if using) and serve hot.
