Chicken marinated in mustard

This marinade is a classic combination of mustard, garlic and herbs that will bring out the best in your chicken dish.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh rosemary
  • 1 teaspoon chopped fresh thyme
  • Salt and pepper to taste

In a medium bowl, whisk together olive oil, mustard, garlic, rosemary and thyme. Season with salt and pepper to taste. Place the chicken breasts in a shallow dish or resealable plastic bag. Pour the marinade over the chicken and turn to coat. Cover the dish or seal the bag and refrigerate for at least 30 minutes or up to 8 hours.

Preheat oven to 375 degrees F (190 degrees C). Grease a baking dish with olive oil. Place the chicken in the prepared baking dish and pour any remaining marinade over top. Bake for 25 to 30 minutes, or until chicken is cooked through.
