Chicken Gratin

This classic French dish is sure to impress. The bubbling combination of cheese, chicken, and veggies make a delicious main course. Serve it with a side salad or steamed veggies for a complete meal.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 red pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 cup white wine
  • 1 (14 ounce) can diced tomatoes
  • 2 cups shredded cheese such as mozzarella or cheddar

Preheat oven to 375 degrees F (190 degrees C).
Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook until lightly browned on both sides. Remove the chicken and place in an oven safe baking dish.
In the same skillet add the chopped onion and red pepper. Saute until they begin to soften. Add garlic and oregano. Pour in white wine and simmer for 1 minute.
Pour the tomato mixture over the chicken. Top with shredded cheese.
Bake uncovered for about 20 minutes or until cheese is melted and bubbly.
