Chicken Fillet with Gooseberries and Raspberries with Pasta and Cheese

This delicious dish is the perfect combination of protein, carbs, and flavor. The chicken fillet is cooked in a creamy sauce with sweet and tangy gooseberries and raspberries for an extra burst of flavor. Paired with pasta and cheese, this meal is sure to hit the spot!


  • 4 chicken fillets
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 teaspoon garlic, minced
  • 1/2 cup white wine
  • 3/4 cup chicken stock
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons butter
  • 1 cup gooseberries
  • 1/2 cup raspberries
  • Salt and pepper to taste


  1. In a large skillet over medium heat, heat olive oil. Add the chicken fillets and cook until golden brown on both sides, about 3-4 minutes per side.
  2. Remove chicken from the pan and set aside.
  3. Add onion and garlic to the skillet and cook until onion is translucent, about 3-4 minutes.
  4. Add white wine to the pan and bring to a boil. Reduce heat to low and simmer for 5 minutes.
  5. Add chicken stock, thyme leaves, butter, gooseberries, raspberries, salt, and pepper. Simmer for 5-10 minutes.
  6. Return chicken fillets to the pan and simmer for an additional 5-10 minutes.
  7. Serve over cooked pasta with grated cheese on top.
