- 4 chicken fillets
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 teaspoon garlic, minced
- 1/2 cup white wine
- 3/4 cup chicken stock
- 1 tablespoon fresh thyme leaves
- 2 tablespoons butter
- 1 cup gooseberries
- 1/2 cup raspberries
- Salt and pepper to taste
- In a large skillet over medium heat, heat olive oil. Add the chicken fillets and cook until golden brown on both sides, about 3-4 minutes per side.
- Remove chicken from the pan and set aside.
- Add onion and garlic to the skillet and cook until onion is translucent, about 3-4 minutes.
- Add white wine to the pan and bring to a boil. Reduce heat to low and simmer for 5 minutes.
- Add chicken stock, thyme leaves, butter, gooseberries, raspberries, salt, and pepper. Simmer for 5-10 minutes.
