Chicken Drumsticks with Carrots

This recipe for chicken drumsticks with carrots is perfect for a hearty family dinner. The combination of crunchy carrots and tender chicken will have everyone asking for more!

  • 4 chicken drumsticks
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 3/4 cup chicken broth
  • Salt and pepper to taste

Heat the olive oil in a large skillet over medium heat. Add the chicken drumsticks and cook until golden brown on both sides, about 5 minutes per side. Remove from the skillet and set aside.

In the same skillet, add the onion and garlic and cook until softened, about 3 minutes. Add the carrots and cook for an additional 2 minutes.

Add the chicken broth to the skillet and stir to combine. Return the chicken drumsticks to the skillet and season with salt and pepper. Bring to a simmer, reduce heat to low, cover, and simmer until the chicken is cooked through and the carrots are tender, about 20 minutes.

Serve warm with your favorite sides.
