- 1 lb boneless, skinless chicken breasts, cut into thin slices
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/2 cup chicken stock
- 3 tablespoons tomato paste
Heat the olive oil in a large skillet over medium-high heat. Add the chicken slices and cook until lightly browned on both sides, about 5 minutes. Add the onion and garlic and cook until softened, about 5 minutes more. Add the ginger, curry powder, cumin and turmeric and stir to combine.
