These Chicken Curry Puffs are a delicious combination of flavorful curry and juicy chicken encased in a light, crisp pastry. Perfect for an appetizer or as part of a meal, these savory puffs are sure to be a hit!
- 2 tablespoons olive oil
- 1 onion, diced
- 1 garlic clove, minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 teaspoon curry powder
- 1 cup cooked chicken, shredded
- 1 tablespoon tomato paste
- Salt and pepper to taste
- 4 sheets frozen puff pastry, thawed and cut into 4-inch circles (or you can make your own)
Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the cumin, coriander, and curry powder and cook for 1 minute more. Add the chicken, tomato paste, salt, and pepper. Cook until heated through. Remove from the heat.
Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.
Place 2 tablespoons of the filling onto each pastry circle. Fold the pastry over to form a half moon shape and press along the edges to seal. Place on the prepared baking sheets.
Bake for 15-20 minutes or until golden brown.
Serve warm or at room temperature.
