Chicken Curry Coconut

This delicious chicken curry coconut recipe is easy to make and can be served with white rice for a complete meal. The creamy coconut milk adds a nice flavor and the curry spices give it an extra kick.

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 boneless, skinless chicken breasts, diced
  • 1 red bell pepper, diced
  • 1 cup coconut milk
  • Salt to taste

Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the cumin, turmeric, garlic and ginger and stir to combine. Add the chicken and bell pepper and cook until the chicken is cooked through, about 10 minutes.

Add the coconut milk and bring to a simmer. Simmer for 5 minutes or until the sauce has thickened slightly. Season with salt to taste.

Serve over white rice.
