Chicken Cocotte Grandma-Style

This traditional French dish is a simple and delicious way to enjoy chicken. The secret to its flavor lies in the combination of fresh herbs, garlic and white wine.

  • 1 whole chicken
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 tablespoon of fresh rosemary, chopped
  • 1 teaspoon of fresh thyme leaves, chopped
  • 1/2 cup of dry white wine
  • Salt and black pepper to taste

Preheat the oven to 350 degrees Fahrenheit. Rinse the chicken with cool water and pat it dry with paper towels. Place the chicken in a roasting pan or heavy-bottomed pot that can be covered tightly with a lid. Rub 1 tablespoon of olive oil all over the chicken. Sprinkle the minced garlic, chopped rosemary and thyme leaves over the chicken. Pour 1/4 cup of white wine over the chicken and season with salt and black pepper.

Cover the pot with a tight-fitting lid or aluminum foil. Bake for 1 hour, then remove from oven and baste with remaining white wine. Cover again and bake for an additional 30 minutes or until internal temperature reaches 165 degrees Fahrenheit.
