Chicken Casserole

This Chicken Casserole recipe is an easy, one-pot dish that’s perfect for a weeknight dinner. It’s packed full of flavor, with a creamy sauce and tender pieces of chicken. Topped with melted cheese, this casserole is sure to become a family favorite.

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 boneless chicken breasts, cut into cubes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup frozen corn kernels
  • 1/2 cup uncooked long grain white rice
  • 2 cups chicken broth
  • 1/2 cup shredded cheddar cheese

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the chicken cubes and cook until lightly browned on all sides. Add the oregano, salt, and pepper and stir to combine. Add the diced tomatoes, corn kernels, rice, and chicken broth and bring to a simmer. Cover the skillet and reduce heat to low. Simmer for 20 minutes or until the rice is cooked through.

Sprinkle the cheese over the top of the casserole and place under a preheated broiler until melted and bubbly. Serve hot.
