- 4 chicken breasts
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 2 tablespoons Dijon mustard
- 1/4 cup white wine or chicken stock
- Salt and pepper to taste
Preheat oven to 350°F. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until soft and translucent, about 5 minutes. Add the mushrooms and garlic and cook until the mushrooms are tender, about 7 minutes. Stir in the thyme, mustard, and white wine or chicken stock. Simmer for 2 minutes.
