Chicken Breasts with Mushrooms and Mustard

This simple yet delicious recipe is a great way to enjoy chicken. The combination of mushrooms, mustard and herbs make for a flavorful dish that can be served as an entree or side dish.

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 2 tablespoons Dijon mustard
  • 1/4 cup white wine or chicken stock
  • Salt and pepper to taste

Preheat oven to 350°F. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until soft and translucent, about 5 minutes. Add the mushrooms and garlic and cook until the mushrooms are tender, about 7 minutes. Stir in the thyme, mustard, and white wine or chicken stock. Simmer for 2 minutes.

Season the chicken breasts with salt and pepper and place in a baking dish. Pour the mushroom mixture over the chicken breasts. Bake in preheated oven for 25-30 minutes, or until chicken is cooked through.
