Chicken Blanquette

A classic French recipe, Chicken Blanquette is a creamy and delicious dish that is sure to please. It’s made with chicken, mushrooms, and a white sauce that’s enriched with butter and cream. Serve this delightful main course over egg noodles or rice for an unforgettable dinner.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 2 cups chicken broth
  • 1/4 cup dry white wine (optional)
  • 3 tbsp all-purpose flour
  • 1/4 cup butter
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions:

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken cubes and cook until golden brown, about 5 minutes.
  2. Add the onion and garlic and cook until softened, about 3 minutes.
  3. Add the mushrooms and cook until they begin to soften, about 2 minutes.
  4. Add the chicken broth and wine (if using) and bring to a boil.< li > Reduce the heat to low , cover , and simmer for 10 minutes . < li > In a small bowl , whisk together the flour and butter until smooth . < li > Slowly add the flour mixture to the skillet , whisking constantly until it is completely incorporated . < li > Stir in the cream and season with salt and pepper . < li > Simmer for 5 minutes more , stirring occasionally , until thickened . < li > Serve over egg noodles or rice .
