Chicken Barley Vegetable Soup

This hearty and comforting soup is perfect for cold weather. It’s full of flavor and nutrients, and is sure to become a family favorite!

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 cups diced carrots
  • 2 cups diced celery
  • 1 teaspoon dried thyme
  • 2 quarts chicken broth
  • 1 cup pearled barley
  • 2 cups diced cooked chicken
  • Salt and pepper to taste

Heat the oil in a large pot over medium-high heat. Add the onion and garlic and cook, stirring often, until the vegetables are softened, about 5 minutes. Add the carrots, celery, and thyme and cook for another 5 minutes. Stir in the broth, barley, and chicken. Bring to a boil, then reduce the heat and simmer for 30 minutes or until the barley is tender.

Taste and season with salt and pepper as needed. Serve hot.
