These chicken and zucchini skewers make for a delicious, easy-to-prepare meal. The smoky paprika adds an extra layer of flavor to the dish.
- 2 tablespoons olive oil
- 1 tablespoon smoked paprika
- 2 medium zucchinis, cut into 1/2-inch cubes
- 1 pound boneless, skinless chicken breast, cut into 1/2-inch cubes
- Salt and freshly ground black pepper, to taste
Preheat your oven to 400°F. Line a baking sheet with parchment paper.
In a small bowl, combine the olive oil and paprika. In a large bowl, toss the zucchini and chicken with the paprika mixture until evenly coated. Season with salt and pepper.
Thread the chicken and zucchini onto skewers. Place the skewers onto the prepared baking sheet and bake in preheated oven until chicken is cooked through, about 15 minutes.
