- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 1 cup long-grain white rice
Heat the oil in a large skillet over medium heat. Add the chicken and cook until browned on both sides and cooked through, about 10 minutes. Remove the chicken from the skillet and set aside.
Add the onion to the skillet and cook until softened, about 5 minutes. Stir in the garlic, paprika, oregano, salt and pepper and cook for 1 minute more.
Return the chicken to the skillet. Add the broth and rice and bring to a boil. Reduce heat to low and simmer for 20 minutes or until all of the liquid has been absorbed. Serve warm.
