Chicken and Rice Soup

This Chicken and Rice Soup is a simple, delicious and hearty soup that can be made in no time. It’s perfect for those cold winter days when you need something warm and comforting. The broth is full of flavor and the addition of the rice gives it a nice texture. Enjoy!

  • 1 lb boneless skinless chicken breasts, cut into small pieces
  • 3 tablespoons olive oil
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon ground thyme
  • Salt and pepper to taste
  • 1 cup uncooked long grain white rice

In a large pot over medium heat, add the oil and heat until shimmering. Add the chicken pieces and cook until lightly browned on both sides. Add the onion, garlic, and carrots to the pot and cook until softened, about 5 minutes.

Add the chicken broth, oregano, basil, thyme, salt, pepper and rice to the pot. Bring to a boil then reduce heat to low. Simmer uncovered for 20 minutes or until the rice is cooked through.
