Chicken and Potato Stew with Chorizo

This hearty chicken and potato stew with chorizo is a great way to warm up on a cold day. The smoky flavor of the chorizo pairs perfectly with the sweet potatoes and tangy tomatoes, making it a great comfort food meal. Plus, it’s super simple to make!

  • 1 tablespoon olive oil
  • 1/2 pound chorizo sausage, diced
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 large sweet potatoes, peeled and cubed
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin powder
  • 3 cups chicken broth
  • 2 cups diced tomatoes
  • Salt and black pepper to taste
  • 2 boneless skinless chicken breasts, cubed

Heat the olive oil in a large pot over medium heat. Add the chorizo and cook until lightly browned. Add the garlic, onion, bell pepper, sweet potatoes, paprika and cumin. Cook for 5 minutes or until vegetables start to soften. Stir in the chicken broth and tomatoes and bring to a boil. Reduce heat to low and simmer for 10 minutes or until sweet potatoes are tender. Season with salt and black pepper.

Add the chicken cubes to the pot and cook for an additional 10 minutes or until cooked through. Serve hot.
