This is a simple but delicious recipe that takes only a few minutes to prepare. The combination of chicken, olives and tomatoes makes for an amazing flavor that will make your mouth water. Serve these chicken and olive bricks with a side of rice or potatoes for a complete meal.
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 pound boneless, skinless chicken breast, cubed
- 1 can (14.5 ounces) diced tomatoes
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup kalamata olives, pitted and halved
Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook for 30 seconds more.
Add the cubed chicken to the skillet and cook until no longer pink, about 5 minutes. Stir in the diced tomatoes with their juices, oregano, salt and pepper.
Bring to a simmer then reduce heat to low. Simmer gently for 10 minutes, stirring occasionally.
Stir in the olives then season to taste with additional salt and pepper if desired.
Serve warm as is or over cooked rice or potatoes.
