Chicken and Bean Stew with Chorizo in the Cookeo

This dish is an easy and delicious way to make a hearty meal with only a few ingredients. The chicken is cooked in a spicy tomato sauce with some chorizo, beans and vegetables.

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 2 cups diced tomatoes
  • 3 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped fresh parsley
  • 2 chicken breasts, cut into cubes
  • 1 cup cooked beans (any type)
  • 4 ounces chorizo sausage, diced

Heat the oil in the Cookeo and add the onion and bell pepper. Cook for 5 minutes until softened. Add the garlic, paprika, chili powder and tomatoes and cook for another 3 minutes. Add the broth, salt and pepper and bring to a boil. Add the parsley, chicken and beans and simmer for 20 minutes or until chicken is cooked through. Lastly add the chorizo and cook for another 5 minutes.
