Chekhchoukha is a traditional Algerian dish that is served in the city of Constantine. It’s made of a thick tomato-based sauce, potatoes, and sometimes lamb or beef. To make Chekhchoukha Constantinoise, you will need:
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 large onion, diced
- 1 teaspoon paprika
- 1 can (14.5 ounces) diced tomatoes
- 2 potatoes, peeled and cubed
- 1 bay leaf
- Salt and pepper to taste
Heat the olive oil in a large saucepan over medium heat. Add the garlic and onion and cook until softened, about 5 minutes. Add the paprika and stir for 1 minute.
Add the diced tomatoes, potatoes, bay leaf and season with salt and pepper to taste. Bring to a boil then reduce heat to low. Simmer for 20 minutes or until potatoes are tender.
Serve hot with rice or couscous.
