This delicious and easy-to-make Carrot Grated Cake recipe is a great way to get the most out of fresh carrots. It’s perfect for lunch, snack or dessert!
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 tablespoons butter, melted
- 3 tablespoons sugar
- 2 eggs
- ¼ cup milk
- 2 cups grated carrot
Preheat oven to 350°F (180°C). Grease 8 inch (20 cm) square baking pan with butter. In a bowl, combine flour, baking powder and salt; set aside.
In a separate bowl, whisk together melted butter and sugar until creamy. Beat in eggs one at a time. Add milk and mix until combined.
Stir in the dry ingredients and mix until just combined. Fold in grated carrots.
Transfer batter to prepared pan and spread evenly. Bake for 25 minutes or until cake is golden brown and toothpick inserted into center comes out clean.
Let cool before cutting into squares.
