This delicious cake is the perfect combination of zesty lemon and sweet passion fruit. The moist and tender texture will leave your guests begging for more!
- 3/4 cup butter, softened
- 1 1/2 cups sugar
- 3 eggs
- 1 teaspoon vanilla extract
- juice of 1 lemon
- zest of 2 lemons
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 cup plain yogurt
- 1/2 cup passion fruit puree or juice
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla, lemon juice, and lemon zest. Combine the flour, baking powder, baking soda, and salt; stir into the batter alternately with the yogurt and passion fruit puree. Pour batter into prepared pan.
Bake for 60 minutes in preheated oven, or until a toothpick inserted into center of the cake comes out clean. Allow to cool for 10 minutes before removing from pan to cool completely.
