This delicious vegan brownie recipe is made with okara, a by-product of soya milk. Okara is a great source of plant-based protein, fibre and minerals, and it adds an extra moistness and richness to this brownie recipe.
Ingredients:
- 1 cup okara
- 1/2 cup vegan butter
- 3/4 cup cocoa powder
- 3/4 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
Instructions:
- Preheat oven to 350F (175C). Grease an 8×8 inch baking pan.
- In a large bowl, mix together the okara, vegan butter, cocoa powder, sugar and baking powder until well combined.
- Add the vanilla extract and mix until combined.
- Add the flour and stir until just combined (do not overmix).
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
