This Lebanese-style chicken skewer recipe is both delicious and easy to make. Be sure to marinate the chicken for at least 8 hours for best results.
- 4 boneless skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1 tablespoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- Salt and pepper to taste
In a medium bowl, combine olive oil, lemon juice, cumin, garlic powder, paprika, coriander, salt and pepper. Mix until all ingredients are combined.
Add the cubed chicken to the bowl and mix until all pieces are evenly coated in the marinade. Cover with plastic wrap and refrigerate for at least 8 hours.
Once chicken has marinated, thread onto skewers. Preheat your grill or grill pan to medium-high heat.
Grill the kebabs, turning occasionally, until all sides are nicely charred and chicken is cooked through (about 10 minutes). Serve with a side of grilled vegetables or salad.
