Briouate au poulet

This Briouate with chicken is a Moroccan pastry filled with seasoned cooked chicken. It is served as an appetizer or as a main dish.

  • 1 lb boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup chicken broth
  • Salt and pepper to taste

In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until lightly browned on both sides, about 5 minutes. Add the garlic, cumin, coriander, parsley and cilantro and cook for 2 minutes more. Add the chicken broth and bring to a simmer. Simmer, stirring occasionally, until the liquid has reduced by half and the chicken is cooked through, about 10 minutes.

Remove from heat and season with salt and pepper. Let cool completely before using in Briouates.
