Introducing an easy and delicious recipe for ballotines of chicken, stuffed with a tasty filling.
- 4 chicken breasts
- 200g of bacon
- 1 onion
- 200g of mushrooms
- 100ml of white wine
- 2 cloves of garlic
- 3 tablespoons of olive oil
- Salt and pepper to taste
Start by slicing the chicken breasts in half, lengthwise. Place the slices between two sheets of parchment paper and use a meat mallet to flatten them. Sprinkle both sides with salt and pepper.
In a pan, heat up the olive oil and add the onion and garlic. Cook until golden brown then add the mushrooms. Cook until all the liquid has evaporated then add the wine. Let it reduce until most of it has evaporated. Take off the heat and set aside.
Place some of the mushroom mixture on each chicken breast, wrap it with some bacon slices and secure it with toothpicks. Place them in a greased baking dish.
Bake in a preheated oven at 180°C for about 25-30 minutes, or until golden brown.
Serve hot with your favorite side dish.
