This Apple-Caramel Salted Butter and Speculoos Log Cake is a delicious and unique dessert. It’s made with layers of caramelized apples, salted butter, and crushed speculoos cookies. The cake is topped with a creamy caramel sauce for a truly decadent treat.
To make this log cake you will need:
- 2 large apples, peeled, cored, and thinly sliced
- 3 tablespoons butter
- 1/4 cup light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup speculoos cookie crumbs
- 1/2 cup heavy cream
- 1/4 cup light corn syrup
Preheat the oven to 350°F (175°C). Grease an 8-inch (20 cm) round baking pan.
In a medium bowl, combine the apples, butter, brown sugar, cinnamon, and nutmeg. Spread the mixture evenly in the prepared baking pan. Sprinkle the speculoos cookie crumbs over the top.
Bake for 25 minutes or until the apples are golden brown. Remove from oven and let cool completely.
In a medium saucepan over medium heat, combine the cream and corn syrup. Bring to a boil and cook for 3 minutes or until thickened. Pour over cooled tart.
