Aiguillettes de poulet au chorizo

This delicious recipe is a great option for a quick lunch or dinner. It’s easy to prepare and full of flavour – you won’t be disappointed!

  • 500g chicken breast (aiguillettes)
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 175g chorizo, diced
  • 200ml chicken stock
  • Salt and freshly ground black pepper, to taste

Heat the oil in a large pan over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and chorizo and cook for a further 2 minutes.

Add the chicken breast to the pan and season with salt and pepper. Pour in the stock, bring to a simmer, then reduce the heat and cook for 10-15 minutes until the chicken is cooked through.

Serve with cooked rice or potatoes.
