This delicious dish of chicken aiguillettes with a creamy chorizo, pepper and sundried tomato sauce is a great way to enjoy a flavorful meal!
- 2 tablespoons olive oil
- 500g chicken aiguillettes
- 2 cloves garlic, finely chopped
- 1 red pepper, diced
- 1 teaspoon paprika
- 100g chorizo, diced
- 200ml double cream
- 50g sundried tomatoes, chopped
- Salt and pepper to taste
Heat the olive oil in a pan over medium-high heat. Add the chicken aiguillettes and cook for 5 minutes until lightly browned. Add the garlic, red pepper and paprika and cook for another 3 minutes.
Add the chorizo and cook for 2 minutes. Pour in the double cream and bring to a simmer. Stir in the sundried tomatoes and season with salt and pepper. Simmer for 8-10 minutes until the sauce has thickened.
